Running a restaurant or café requires time and strategic thinking. This course is perfect for you, whether you have extensive experience, are new to the industry, or want to enhance your understanding to reach new career heights.
Course Content
You will learn:
- optimization of Pricing and Capacity: Strategies to increase revenue per guest.
- efficient Booking and Seating Management: How to manage bookings to maximize revenue.
- increasing Demand During Low Traffic Times: Methods to fill periods with low revenue.
- strategic Upselling: How to create value and increase turnover per guest.
- menu Design and Psychology: Tips on designing the menu to guide choices and boost revenue.
- digital and Printed Menus: Using QR codes and traditional menus to maximize efficiency.
Each session concludes with a short assignment that summarizes the day's topics and must be submitted by 7:00 PM on the same day.
After completing the diploma cours Revenue Management you will be able to optimize income and reduce costs to maximize both turnover and profit.
To receive a diploma, at least 80% attendance is required and that you have passed the examination, which in this education means approved home assignments.
Structure
The course is delivered remotely and is carried out according to schedule. The training includes 27 clock hours (i.e. 36 study hours) divided into 9 meetings.

- February 3–5, 13:00 AM–16:00 PM
- February10–12, 13:00 AM–16:00 PM
Prerequisites
Everyone is welcome. No prior knowledge is required as the education is adapted for you as a beginner. The course is designed for everyone in the industry, from restaurant owner and manager to head chef, sous chef, bar manager, maître d’s, café manager, barista, and those planning to open their first restaurant or café. It also suits those looking to develop their skills and take on more responsibility.
Course Material
To participate, you will need a computer with a camera and a stable internet connection. Your own notes and PDF materials will form the basis of your studibility.
About the Instructor
Marcus Dahl is committed and works in a pedagogical way and always has a good group dynamic in the education. Marcus has extensive international experience in the restaurant industry, having worked in Sweden, the USA, Dubai, Spain, Switzerland, and Denmark. He is trained in Hotel Management at César Ritz Colleges in Switzerland and in Revenue Management at Cornell University in the USA. With over 20 years of experience, including responsibility for restaurants with profit margins over 20% achieved through strategic revenue
management, he now shares his knowledge with other industry professionals.
Registration
We reserve the right to cancel the education if there are too few participants and shorten it if there are fewer than six participants. We start at four participants and will be a maximum of 8 participants. Registration is binding!
Financing
The education is not eligible for student aid.
If you want to pay by invoice, choose Medborgarskolan invoice. If you want to pay in installments, write in the message box that you want to pay in installments. It is possible to split the invoice into up to two parts.
